  • pepper
  • 120g grated cheese
  • 4 heatproof ramekins
  • To serve: lemon wedges

Instructions

  1. Roughly dice the pork and cook in lightly salted water with the halved onion, bay leaf and peppercorns until soft. Depending on the meat, this takes about 50 to 60 minutes.
  2. Remove the meat from the stock, let it cool slightly and cut into small bite-sized cubes. Pour the cooking stock through a sieve and collect 250 ml of it.
  3. Melt the butter in a saucepan, stir in the flour and sauté briefly without letting it darken.
  4. Gradually pour in the cooking liquid and stir until smooth. Then incorporate cream, lemon juice, Worcestershire sauce and nutmeg.
  5. Simmer the sauce gently for 5 to 8 minutes until it becomes creamy. Season with salt and pepper.
  6. Add the meat to the sauce, bring to the boil and divide between the ramekins.
  7. Sprinkle with grated cheese and bake in a preheated oven at 220 °C top/bottom heat or under the grill for 8 to 12 minutes until the cheese is golden brown.
  8. Serve immediately hot with a lemon wedge, some Worcestershire sauce and toast.
